Ingredients
Scale
Main Ingredients
- 8 ounces (about 1 packed cup) chopped dates
- 1/2 cup honey
- 1 tablespoon chia seeds (optional)
- 1 tablespoon ground flax seeds
- Pinch of salt
Mix-Ins
- 1 1/2 cups old-fashioned oats (dry, not cooked)
- 1 cup shelled pistachio nuts
- 1 cup dried cranberries
- 1/3 cup white chocolate chips (optional)
Instructions
- Prepare the base mixture: Combine the chopped dates, honey, chia seeds, ground flax seeds, and a pinch of salt in a food processor. Pulse until the mixture is smooth and well combined. If the mixture is too thick to stir easily, add an extra tablespoon or two of honey to achieve the right consistency.
- Mix in dry ingredients: Transfer the smooth date mixture to a large bowl. Stir in the old-fashioned oats, shelled pistachios, dried cranberries, and white chocolate chips until evenly distributed throughout.
- Chill the mixture: Cover the bowl and refrigerate the mixture for at least 30 minutes. Chilling will firm up the mixture and make it easier to handle.
- Form the energy bites: Once chilled and firmer, use a spoon or cookie scoop to portion out the mixture into approximately 1-inch diameter balls. Alternatively, press the mixture evenly into a parchment-lined baking pan, chill until set, then cut into bars if preferred.
- Store properly: Keep the energy bites covered and refrigerated for up to 2 weeks. Refrigeration helps them maintain their shape and freshness.
Notes
- Adding chia seeds is optional but boosts fiber and omega-3 fatty acids.
- Using ground flax seeds adds nutritious oils and fiber for added health benefits.
- White chocolate chips are optional; you can omit for a less sweet snack.
- The mixture should be sticky but pliable; adjust honey quantity if needed for proper consistency.
- Store energy bites in an airtight container to keep them fresh longer.
