Ingredients
Scale
Pasta
- 12 ounces fettuccine pasta
Sauce
- ¼ cup unsalted butter
- 1 small onion, diced
- 1 green bell pepper, diced
- 2 cloves garlic, minced
- 1 can (10.5 oz) cream of mushroom soup
- 1 can (10.5 oz) cream of celery soup
- 1 cup half-and-half or heavy cream
- 1 teaspoon Cajun seasoning
- ½ teaspoon salt
- ¼ teaspoon black pepper
Seafood & Cheese
- 1 pound cooked crawfish tails (with fat, if available)
- 1 cup shredded cheddar cheese
Garnish
- Chopped parsley
Instructions
- Cook Pasta: Cook the fettuccine according to package directions until al dente. Drain the pasta and set it aside to be combined with the sauce later.
- Sauté Vegetables: In a large skillet over medium heat, melt the unsalted butter. Add diced onion, green bell pepper, and minced garlic, sautéing until the vegetables are softened and fragrant, about 5 minutes.
- Prepare Sauce: Stir in the cream of mushroom soup, cream of celery soup, and half-and-half or heavy cream into the skillet with the vegetables. Add the Cajun seasoning, salt, and black pepper. Stir well until the sauce is smooth and heated through evenly.
- Add Crawfish: Add the cooked crawfish tails (including any fat for added richness) to the sauce. Allow the mixture to simmer gently for 5 to 7 minutes, stirring occasionally so the flavors meld.
- Toss Pasta with Sauce: Add the drained fettuccine to the skillet and toss thoroughly until the pasta is evenly coated with the creamy crawfish sauce.
- Incorporate Cheese and Serve: Stir in the shredded cheddar cheese, mixing until melted and incorporated into the sauce. Serve the dish warm, garnished with freshly chopped parsley for a bright finish.
Notes
- If crawfish is unavailable, substitute cooked shrimp as a great alternative.
- Adjust the amount of Cajun seasoning to suit your preferred level of spice and heat.
- For a richer sauce, use heavy cream instead of half-and-half.
