Instructions

  1. Cook Pasta: Cook the fettuccine according to package directions until al dente. Drain the pasta and set it aside to be combined with the sauce later.
  2. Sauté Vegetables: In a large skillet over medium heat, melt the unsalted butter. Add diced onion, green bell pepper, and minced garlic, sautéing until the vegetables are softened and fragrant, about 5 minutes.
  3. Prepare Sauce: Stir in the cream of mushroom soup, cream of celery soup, and half-and-half or heavy cream into the skillet with the vegetables. Add the Cajun seasoning, salt, and black pepper. Stir well until the sauce is smooth and heated through evenly.
  4. Add Crawfish: Add the cooked crawfish tails (including any fat for added richness) to the sauce. Allow the mixture to simmer gently for 5 to 7 minutes, stirring occasionally so the flavors meld.
  5. Toss Pasta with Sauce: Add the drained fettuccine to the skillet and toss thoroughly until the pasta is evenly coated with the creamy crawfish sauce.
