Instructions

  1. Prepare the Spinach: If using fresh spinach, heat olive oil in a skillet over medium heat and sauté the spinach until wilted, about 3–4 minutes. Remove from the pan, drain excess liquid, and set aside.
  2. Sauté Onions and Garlic: In the same skillet, melt the butter over medium heat. Add the finely chopped onion and cook for 3–4 minutes until soft and translucent. Add the minced garlic and cook for an additional 30 seconds to release its aroma.
  3. Make the Roux: Sprinkle the flour over the onion and garlic mixture and stir constantly for 1–2 minutes to create a roux, which will thicken the sauce.
  4. Add Dairy: Slowly whisk in the whole milk and heavy cream, stirring continuously until the mixture is smooth and begins to thicken.
  5. Season the Sauce: Stir in the ground nutmeg, salt, and black pepper. Continue to cook for 3–5 minutes until the sauce thickens to a creamy consistency.
