For the Soup:

  • 1 tablespoon olive oil
  • 1 pound ground Italian sausage or ground chicken
  • 1 small yellow onion (diced)
  • 3 cloves garlic (minced)
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes (optional)
  • 6 cups chicken broth
  • 8 lasagna noodles (broken into pieces)
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 cup ricotta cheese
  • 2 cups fresh spinach (roughly chopped)
  • chopped fresh basil or parsley for garnish (optional)

Instructions

  1. In a large pot, heat olive oil over medium heat. Add the ground sausage and cook until browned, breaking it apart as it cooks. Drain excess fat if needed.
  2. Add onion and garlic and sauté for 3–4 minutes until softened and fragrant. Stir in Italian seasoning, salt, black pepper, and red pepper flakes.
  3. Pour in chicken broth and bring to a boil. Add broken lasagna noodles and cook for 10–12 minutes, stirring occasionally, until pasta is tender.
  4. Reduce heat to low and stir in heavy cream, Parmesan, and mozzarella until melted and the soup is creamy. Add ricotta in spoonfuls, followed by chopped spinach.
  5. Stir gently until spinach wilts and ricotta is slightly blended but still visible in creamy pockets. Serve hot, garnished with fresh basil or parsley if desired.

Notes

  • For a lighter version, use half-and-half instead of heavy cream and ground chicken instead of sausage.
  • You can also use oven-ready lasagna noodles—just reduce cooking time slightly.
  • This soup thickens as it cools, so thin with extra broth when reheating if needed.
