  • 1 tablespoon olive oil
  • 1 pound ground Italian sausage (mild or spicy)
  • 1 small yellow onion, diced
  • 3 garlic cloves, minced
  • 4 cups low-sodium chicken broth
  • 2 cups Alfredo sauce
  • 1 (14.5 oz) can diced tomatoes, undrained
  • 1/2 teaspoon dried basil
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon crushed red pepper flakes (optional)
  • 8 lasagna noodles, broken into bite-sized pieces
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup heavy cream
  • Salt and pepper to taste
  • Optional: chopped parsley for garnish

Instructions

  1. In a large pot or Dutch oven, heat olive oil over medium heat. Add the Italian sausage and cook until browned, breaking it into crumbles.
  2. Add the diced onion and cook until softened, about 4 minutes. Stir in the garlic and cook for another 30 seconds.
  3. Pour in the chicken broth, Alfredo sauce, diced tomatoes with juice, basil, oregano, and red pepper flakes. Stir well to combine.
  4. Add the broken lasagna noodles and bring the soup to a boil. Reduce heat to a simmer and cook uncovered for 10 to 12 minutes, or until noodles are tender, stirring occasionally.
  5. Stir in the mozzarella, Parmesan, and heavy cream. Season with salt and pepper to taste. Cook for another 2 to 3 minutes until cheese is melted and soup is creamy.
  6. Garnish with parsley and serve hot.
