Chicken:

  • 4 boneless, skinless chicken breasts

Sauce:

  • 2 tablespoons olive oil
  • 2 tablespoons unsalted butter
  • 8 oz cremini or button mushrooms (sliced)
  • 3 garlic cloves (minced)
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup chicken broth
  • 1/2 cup heavy cream
  • 6 oz brie cheese (rind removed and cut into chunks)
  • chopped fresh parsley for garnish (optional)

Instructions

  1. Season chicken breasts: Season chicken breasts with salt and pepper.
  2. Sear chicken: In a large skillet, heat olive oil over medium-high heat. Add chicken and sear for 4–5 minutes per side. Transfer to a plate.
  3. Cook mushrooms: In the same skillet, add butter, mushrooms, garlic, and thyme. Cook until mushrooms release moisture.
  4. Add liquids: Pour in chicken broth, then add heavy cream. Simmer and stir in brie cheese.
  5. Combine and serve: Return chicken to the skillet, simmer until cooked through. Serve with sauce and mushrooms over chicken. Garnish with parsley.
