For the Chicken:
- 4 boneless, skinless chicken breasts

- 1/2 teaspoon black pepper
- 2 tablespoons olive oil
For the Brie Sauce:
- 2 tablespoons unsalted butter
- 8 ounces cremini or button mushrooms, sliced
- 2 cloves garlic, minced
- 1/2 cup chicken broth
- 1/2 cup heavy cream
- 5 ounces Brie cheese, rind removed, cut into small pieces
- 1 teaspoon fresh thyme leaves (or 1/2 teaspoon dried)
- Chopped fresh parsley for garnish
Instructions
- Season the Chicken: Season the chicken breasts with salt and pepper.
- Sear the Chicken: Heat olive oil in a large skillet over medium-high heat. Sear the chicken for 5–6 minutes per side until golden brown. Remove from skillet.
- Prepare the Brie Sauce: In the same skillet, add butter, mushrooms, and garlic. Cook until mushrooms are browned. Pour in chicken broth, then add cream and Brie. Stir until smooth. Return chicken to skillet.
- Simmer: Simmer for 2–3 minutes to reheat the chicken and meld flavors. Garnish with parsley before serving.

- For added depth, substitute a splash of white wine for part of the broth.
