  • 1 pound smoked sausage or kielbasa (sliced into rounds)

Vegetables:

  • 1 medium onion (diced)
  • 3 garlic cloves (minced)
  • 4 cups green cabbage (shredded)
  • 2 medium carrots (sliced)
  • 2 celery stalks (sliced)
  • 2 medium potatoes (peeled and diced)

Broth and Seasonings:

  • 4 cups chicken broth
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon salt (to taste)
  • 1 bay leaf

Additional:

  • 1 cup heavy cream
  • 2 tablespoons all-purpose flour
  • 2 tablespoons fresh parsley (chopped)

Instructions

  1. Brown the Sausage: Heat olive oil in a large pot over medium heat. Add the sliced sausage and cook until browned, about 5 minutes. Remove sausage and set aside.
  2. Sauté Vegetables: In the same pot, add the onion, carrots, and celery. Sauté for 5 minutes, until softened. Add the garlic and cook for 30 seconds.
  3. Cook the Soup: Stir in the cabbage, chicken broth, potatoes, paprika, pepper, salt, and bay leaf. Bring to a boil, then reduce heat and simmer for 20–25 minutes, or until the potatoes are tender.
  4. Thicken the Soup: In a small bowl, whisk together the heavy cream and flour until smooth. Stir into the soup and simmer for another 5 minutes, stirring occasionally, until slightly thickened. Return the sausage to the pot and heat through.
  5. Finish and Serve: Remove the bay leaf, adjust seasoning if needed, and garnish with fresh parsley before serving.

Notes

  • For extra richness, stir in 1/2 cup shredded cheese before serving.
