Pasta:
- 8 ounces fettuccine or penne pasta
Chicken or Shrimp:
- 1 tablespoon olive oil
- 1 tablespoon butter
- 1 pound chicken breast or shrimp (sliced or peeled and deveined)
- 1 tablespoon Cajun seasoning (plus more to taste)
Veggies:
- 1 red bell pepper (sliced)
- 1/2 small red onion (sliced)
- 3 cloves garlic (minced)
Sauce:
- 1 cup heavy cream
- 1/2 cup chicken broth
- 1/2 cup grated Parmesan cheese
- Salt and pepper to taste
- Chopped fresh parsley for garnish (optional)
Instructions
- Cook Pasta: Cook pasta according to package instructions in salted water until al dente. Drain and set aside.
- Sauté Protein: Heat olive oil and butter in a skillet. Season and cook chicken or shrimp until browned. Remove and set aside.
- Cook Veggies: In the same skillet, sauté bell pepper, onion, and garlic until softened.
- Make Sauce: Pour in cream and broth, simmer, then stir in Parmesan until creamy.
- Combine: Return protein and pasta to the skillet, toss to coat in sauce.
- Season and Serve: Adjust seasoning, garnish with parsley, and serve hot.
