Pasta:

  • 8 ounces fettuccine or penne pasta

Chicken or Shrimp:

  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • 1 pound chicken breast or shrimp (sliced or peeled and deveined)
  • 1 tablespoon Cajun seasoning (plus more to taste)

Veggies:

  • 1 red bell pepper (sliced)
  • 1/2 small red onion (sliced)
  • 3 cloves garlic (minced)

Sauce:

  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste
  • Chopped fresh parsley for garnish (optional)

Instructions

  1. Cook Pasta: Cook pasta according to package instructions in salted water until al dente. Drain and set aside.
  2. Sauté Protein: Heat olive oil and butter in a skillet. Season and cook chicken or shrimp until browned. Remove and set aside.
  3. Cook Veggies: In the same skillet, sauté bell pepper, onion, and garlic until softened.
  4. Make Sauce: Pour in cream and broth, simmer, then stir in Parmesan until creamy.
  5. Combine: Return protein and pasta to the skillet, toss to coat in sauce.
