Chicken:

  • 1 pound boneless, skinless chicken breasts or thighs, cut into bite-sized pieces

Other Ingredients:

  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 cup uncooked long grain white rice
  • 2 1/4 cups chicken broth
  • 1 cup heavy cream
  • 1 cup frozen peas and carrots
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup grated Parmesan cheese
  • Chopped parsley for garnish (optional)

Instructions

  1. Cook the Chicken: In a large skillet, heat olive oil and butter. Add chicken and cook until browned. Remove and set aside.
  2. Sauté Aromatics: In the same pan, sauté onion until softened. Add garlic and cook briefly.
  3. Prepare the Rice: Stir in rice and cook briefly. Add chicken broth, cream, thyme, salt, and pepper. Simmer until rice is tender.
  4. Finish the Dish: Stir in peas, carrots, and chicken. Cook until heated through. Remove from heat and stir in Parmesan until creamy. Let sit before serving. Garnish with parsley.
