- 1 cup uncooked orzo
- 2 cups low-sodium chicken broth

- 1 cup baby spinach (roughly chopped)
- 1/2 cup grated Parmesan cheese
- 1/4 teaspoon black pepper
- Salt to taste
- Optional red pepper flakes for heat
Instructions
- Heat olive oil: In a large skillet over medium heat, add olive oil. Cook the sliced chicken sausage for 3–4 minutes until lightly browned.
- Add onion and garlic: Add diced onion and cook for 2–3 minutes until softened. Stir in minced garlic and cook for 30 seconds.
- Cook orzo: Add orzo to the skillet, coating it with oil and aromatics. Pour in chicken broth, bring to a simmer, cover, and cook for 8–10 minutes until orzo is tender.
- Finish the dish: Stir in heavy cream, spinach, Parmesan, black pepper, and salt. Cook for 2–3 minutes until spinach wilts and the sauce is creamy.
- Serve: Serve warm with extra Parmesan if desired.
