Instructions

  1. Cook the Chicken: In a large skillet over medium-high heat, heat the olive oil. Season the chicken strips with salt, pepper, and paprika. Add them to the skillet and cook until browned and cooked through, about 5–6 minutes. Remove the chicken from the pan and set aside.
  2. Sauté Vegetables: In the same skillet, add butter and sauté the finely chopped onions until softened, about 3 minutes. Add the minced garlic and sliced mushrooms, cooking for an additional 4–5 minutes until the mushrooms are tender and lightly browned.
  3. Make the Sauce Base: Sprinkle the flour over the mushroom mixture and stir continuously for 1 minute to cook the flour. Slowly pour in the chicken broth while stirring to avoid lumps. Allow the sauce to simmer for 2–3 minutes until it starts to thicken.
  4. Combine and Simmer: Lower the heat to low and mix in the sour cream and Dijon mustard until combined smoothly. Return the cooked chicken strips to the skillet and stir to coat them evenly with the creamy sauce. Let everything simmer gently for 2–3 minutes to warm through.
  5. Garnish and Serve: Sprinkle chopped parsley over the dish for a fresh finish. Serve the creamy chicken stroganoff hot over cooked egg noodles, rice, or mashed potatoes as preferred.
