- 1½ cups baby carrots
- 1½ cups broccoli florets
- 1½ cups baby potatoes, halved

- 1 cup chicken broth
- 1 cup heavy cream
- ½ cup grated Parmesan cheese
- 1 teaspoon Italian seasoning
- Chopped fresh parsley for garnish (optional)
Instructions
- Season the Chicken: Season chicken breasts with garlic powder, salt, and pepper.
- Cook the Chicken: In a large skillet, heat olive oil and butter. Sear chicken for 5–6 minutes per side until golden and cooked through. Remove and set aside.
- Sauté Vegetables: In the same skillet, add garlic and cook for 30 seconds. Add baby carrots, broccoli, and potatoes. Sauté for 3–4 minutes.
- Simmer: Pour in chicken broth, cover, and cook for 10–12 minutes until vegetables are tender.
- Make the Sauce: Stir in heavy cream, Parmesan cheese, and Italian seasoning.
- Combine and Serve: Return chicken to the skillet, simmer for another 3–4 minutes, spooning sauce over the chicken. Garnish with parsley before serving.
