Pastina:
- 1 cup pastina (tiny star-shaped pasta)
Broth:
- 3 cups low-sodium chicken broth or water
Additional Ingredients:
- 2 tablespoons unsalted butter
- 1/4 cup grated Parmesan cheese
- 1/4 cup whole milk or heavy cream
- Salt and black pepper to taste
- Optional chopped fresh parsley for garnish
Instructions
- Boil Broth: In a medium saucepan, bring the chicken broth or water to a boil.
- Stir in Ingredients: Reduce the heat to low and stir in the butter until melted. Add the grated Parmesan cheese and milk, stirring until the pastina is creamy and smooth.
- Season and Garnish: Season with salt and black pepper to taste. Remove from heat and let sit for a minute to thicken. Garnish with fresh parsley if desired and serve warm.
Add the pastina and cook according to package instructions, stirring frequently, until the pasta is tender and most of the liquid is absorbed, about 5-6 minutes.
Notes
- For extra richness, use heavy cream instead of milk.
- You can also stir in an egg yolk off the heat for an even creamier texture, just like a classic Italian nonna would do!
