Ingredients

1 whole chicken (about 4–5 pounds);

Seasoning:

2 tablespoons olive oil, 1 teaspoon salt, ½ teaspoon black pepper, 1 teaspoon dried Italian seasoning;

Stuffing:

1 lemon, halved, 1 medium onion, quartered, 4 cloves garlic, minced, 3–4 fresh thyme sprigs, 3–4 fresh rosemary sprigs;

Sauce:

1 cup chicken broth, ½ cup heavy cream, 1 tablespoon lemon juice, 1 teaspoon lemon zest, 2 tablespoons unsalted butter, divided


Instructions

  1. Preheat Oven: Preheat oven to 375°F (190°C).
  2. Season Chicken: Pat chicken dry, season with salt, pepper, and Italian seasoning. Stuff cavity with lemon, onion, and herbs.
  3. Sear Chicken: Sear chicken in a Dutch oven with olive oil and butter. Remove chicken.
  4. Prepare Sauce: Sauté garlic, add broth, lemon juice, zest, and butter. Return chicken to pot.
  5. Roast Chicken: Cover and roast for 1 hour and 15 minutes. Rest chicken.
  6. Make Sauce: Simmer pot juices with cream until thickened.
