Ingredients
Scale
Fudge Mixture
- 2 cups pure maple syrup
- 1 cup heavy cream
- 1/4 cup unsalted butter, cubed
- 1/2 tsp vanilla extract
- A pinch of salt
Base
- 1/2 cup crushed graham crackers
Instructions
- Prepare the Maple Mixture: Combine 2 cups of pure maple syrup and 1 cup of heavy cream in a medium, heavy-bottomed saucepan to ensure even heating and prevent burning.
- Bring to a Boil: Stir the mixture gently over medium heat and bring it to a boil, ensuring it doesn’t scorch on the bottom.
- Cook to Soft-Ball Stage: Attach a candy thermometer to the saucepan, making sure it does not touch the pan’s bottom. Cook the mixture undisturbed until it reaches 235°F (113°C), the soft-ball stage critical for proper fudge consistency.
- Cool Down: Remove the saucepan from the heat and stir in the 1/4 cup of cubed unsalted butter, 1/2 teaspoon of vanilla extract, and a pinch of salt. Let the mixture cool without stirring until it reaches about 110°F (43°C).
- Beat the Mixture: Using a wooden spoon, beat the cooled mixture vigorously for 5 to 8 minutes until it thickens and develops a matte appearance, indicating the right fudge texture.
- Prepare the Base: Line a mini muffin tin with parchment liners or grease it lightly to prevent sticking. Sprinkle a thin layer of the 1/2 cup crushed graham crackers into each mold to form the base.
- Assemble the Bites: Spoon the beaten fudge mixture over the graham cracker base in each mold, pressing lightly to set the fudge firmly on the base.
- Set and Serve: Allow the fudge bites to cool at room temperature briefly, then refrigerate for at least 1 hour until fully set. Serve chilled for the best texture and flavor experience.
Notes
- Ensure to use a candy thermometer for accurate temperature measurement to achieve the proper fudge consistency.
- Do not stir the mixture when it reaches the soft-ball stage to avoid crystallization issues.
- Use fresh pure maple syrup for the best flavor quality and creaminess.
- Store leftover fudge bites in an airtight container in the refrigerator for up to one week.
- For a dairy-free option, substitute heavy cream and butter with coconut cream and vegan butter respectively.
