  • 2 1/2 cups vegetable broth
  • 1/2 cup canned coconut milk (full-fat)
  • 1/4 cup sun-dried tomatoes (chopped)
  • 1 tablespoon nutritional yeast (optional)
  • 1 tablespoon lemon juice

Garnish:

  • Chopped fresh basil or parsley

Instructions

  1. Sauté Aromatics: Heat olive oil in a skillet, sauté onion until soft, add garlic, oregano, red pepper flakes, paprika, salt, and black pepper.
  2. Cook Lentils: Stir in tomato paste, then add lentils and vegetable broth. Simmer until lentils are tender.
  3. Add Creaminess: Stir in coconut milk, sun-dried tomatoes, and nutritional yeast. Simmer until creamy.
  4. Finish and Serve: Remove from heat, stir in lemon juice. Garnish with fresh herbs and serve warm.
