Ingredients
Scale
Chicken
- 4 pieces Chicken Breasts
- 1 teaspoon Salt
- 1 teaspoon Pepper
- 2 tablespoons Olive Oil (extra virgin preferred)
Sauce & Vegetables
- 3 cloves Minced Garlic
- 8 ounces Sliced Mushrooms (button or cremini)
- 1/2 cup Chopped Sun-Dried Tomatoes (can substitute fresh tomatoes)
- 1 cup Chicken Broth (low-sodium recommended)
- 1 cup Heavy Cream (or half-and-half for lighter option)
- 1/2 cup Parmesan Cheese (freshly grated)
Instructions
- Preheat Oven: Preheat your oven to 375°F (190°C) to prepare for baking the chicken later.
- Sauté Garlic: Heat 2 tablespoons of olive oil in a large skillet over medium heat. Add the minced garlic and cook for about 30 seconds until fragrant, being careful not to burn it.
- Cook Mushrooms and Tomatoes: Add the sliced mushrooms and chopped sun-dried tomatoes to the skillet. Sauté for 5 minutes until the mushrooms become tender and release their juices.
- Season and Brown Chicken: Season the chicken breasts evenly on both sides with salt and pepper. Place them in the skillet with the vegetables and brown each side for 3-4 minutes until golden brown.
- Add Liquids and Cheese: Pour the chicken broth and heavy cream over the browned chicken in the skillet. Sprinkle the freshly grated Parmesan cheese on top of the chicken and sauce.
- Bake: Transfer the entire skillet to the preheated oven. Bake for 25-30 minutes until the chicken is fully cooked through and reaches an internal temperature of 165°F (74°C).
- Rest and Serve: Remove from the oven and let the chicken rest for a few minutes to retain juices. Garnish with additional Parmesan cheese if desired before serving.
Notes
- Use low-sodium chicken broth to control salt levels in the dish.
- You can substitute half-and-half for heavy cream to reduce calories while maintaining creaminess.
- Make sure to use a skillet safe for oven use, such as cast iron or stainless steel, to transfer directly from stovetop to oven.
- If fresh sun-dried tomatoes are unavailable, high-quality jarred sun-dried tomatoes in oil work well too.
- To add more flavor, consider seasoning the chicken with Italian herbs or smoked paprika.
