For the soup:
- 2 tablespoons unsalted butter
- 1 tablespoon olive oil
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 pound cremini or button mushrooms, sliced
- 1/2 teaspoon dried thyme
- 1/4 cup all-purpose flour
- 4 cups vegetable broth
- 1 cup heavy cream
- 1 tablespoon soy sauce
- Salt and black pepper, to taste
For garnish:
- 2 tablespoons chopped fresh parsley
Instructions
- In a large pot, melt the butter with the olive oil over medium heat. Add the chopped onion and cook for 5-6 minutes until softened.
- Stir in the garlic and cook for another minute until fragrant.
- Add the sliced mushrooms and dried thyme and cook for 8-10 minutes, stirring occasionally, until the mushrooms release their juices and begin to brown.
- Sprinkle the flour over the mushrooms and stir well to coat evenly.
- Gradually pour in the vegetable broth while stirring to avoid lumps.
- Bring the soup to a gentle boil, then reduce the heat and simmer for 10 minutes until slightly thickened.
- Stir in the heavy cream and soy sauce, then season with salt and black pepper to taste.
- Simmer for an additional 5 minutes.
- Use an immersion blender to blend part of the soup for a creamier texture, or leave it chunky if preferred.
- Garnish with fresh parsley before serving.

- For a richer flavor, add a splash of dry white wine when cooking the mushrooms.
