For the soup:

  • 2 tablespoons unsalted butter
  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 pound cremini or button mushrooms, sliced
  • 1/2 teaspoon dried thyme
  • 1/4 cup all-purpose flour
  • 4 cups vegetable broth
  • 1 cup heavy cream
  • 1 tablespoon soy sauce
  • Salt and black pepper, to taste

For garnish:

  • 2 tablespoons chopped fresh parsley

Instructions

  1. In a large pot, melt the butter with the olive oil over medium heat. Add the chopped onion and cook for 5-6 minutes until softened.
  2. Stir in the garlic and cook for another minute until fragrant.
  3. Add the sliced mushrooms and dried thyme and cook for 8-10 minutes, stirring occasionally, until the mushrooms release their juices and begin to brown.
  4. Sprinkle the flour over the mushrooms and stir well to coat evenly.
  5. Gradually pour in the vegetable broth while stirring to avoid lumps.
  6. Bring the soup to a gentle boil, then reduce the heat and simmer for 10 minutes until slightly thickened.
  7. Stir in the heavy cream and soy sauce, then season with salt and black pepper to taste.
  8. Simmer for an additional 5 minutes.
  9. Use an immersion blender to blend part of the soup for a creamier texture, or leave it chunky if preferred.
  10. Garnish with fresh parsley before serving.

Notes

  • For a richer flavor, add a splash of dry white wine when cooking the mushrooms.
