Ingredients:

  • 1 tablespoon olive oil
  • 2 cloves garlic (minced)
  • 1 cup orzo pasta
  • 2 cups chicken or vegetable broth
  • 1/2 cup frozen peas
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup heavy cream
  • 1 tablespoon unsalted butter
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • Chopped fresh parsley for garnish (optional)

Instructions

  1. In a medium saucepan, heat olive oil over medium heat. Add garlic and cook for 30 seconds until fragrant.
  2. Stir in the orzo and toast for 2–3 minutes, stirring frequently. Pour in the broth and bring to a simmer.
  3. Reduce heat to low and cook, stirring occasionally, for 8–10 minutes or until orzo is tender and most of the liquid is absorbed.
  4. Stir in the peas and cook for another 2–3 minutes until heated through.
  5. Remove from heat and stir in Parmesan, heavy cream, butter, salt, and pepper until creamy and well combined. Garnish with chopped parsley and serve warm.

Notes

  • For added protein, stir in shredded rotisserie chicken or crispy pancetta.
  • You can use milk instead of cream for a lighter version.
