Ingredients

Italian Sausage:

1 pound mild or spicy Italian sausage, casings removed

Olive Oil:

1 tablespoon

Vegetables:

1 medium onion (diced), 2 carrots (peeled and sliced), 2 celery stalks (sliced), 3 cloves garlic (minced)

Chicken Broth:

5 cups

Russet Potatoes:

4 medium, peeled and diced

Seasonings:

1 teaspoon dried thyme, 1 teaspoon dried oregano, 1/2 teaspoon salt (or to taste), 1/2 teaspoon black pepper

Heavy Cream:

1 cup

Fresh Spinach:

2 cups, chopped

Parmesan Cheese:

1/4 cup, grated

Garnish:

Fresh parsley


Instructions

  1. Brown the Sausage: In a large pot, cook the sausage until browned, then set aside.
  2. Sauté Vegetables: Sauté onion, carrots, and celery until softened. Add garlic and cook briefly.
  3. Cook the Soup: Add broth, potatoes, seasonings. Simmer until potatoes are tender. Return sausage to pot.
  4. Finish the Soup: Stir in cream, spinach, Parmesan. Cook until creamy. Adjust seasoning. Garnish and serve.

  • For a lighter version, use half-and-half or whole milk instead of heavy cream.
