  • 2 cups organic vegetable stock

  • 4 Tbsps tomato paste, organic
  • 1 tsp sea salt (plus more to taste)
  • 1 tsp On Everything All-Purpose Blend
  • 1/2 tsp smoked paprika

Instructions

  1. Roast Tomatoes and Garlic: Roast the tomatoes and garlic bulbs according to the Herb Roasted Tomatoes recipe until tender and caramelized. Once cooled, squeeze out the roasted garlic from the bulbs and set aside.
  2. Sauté Onions: In a medium-sized Dutch oven over medium-high heat, heat the olive oil. Add the chopped onions and sauté until they become translucent and fragrant, about 1-2 minutes. Remove from heat.
  3. Blend Ingredients: Transfer the sautéed onions to a high-powered blender. Add the roasted tomatoes, roasted garlic cloves, tomato paste, and vegetable stock. Blend on high speed until smooth and fully combined. Save a few roasted tomato pieces to use as garnish, if desired.
  4. Combine Soup Mixture: Pour the blended tomato mixture back into the Dutch oven over medium-high heat. Add the heavy cream, sea salt, On Everything All-Purpose Blend, and smoked paprika. Stir well to combine all ingredients evenly.
  5. Simmer Soup: Bring the mixture to a boil for 1-2 minutes, then reduce the heat to low and let it simmer gently for another 5-6 minutes. This allows the soup to thicken and flavors to meld.
