Potatoes:

  • 2 pounds Yukon gold or russet potatoes, peeled and thinly sliced

Cheese Sauce:

  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour
  • 2 cups whole milk
  • 1 cup heavy cream
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon dried thyme
  • 1 ½ cups shredded sharp cheddar cheese
  • ½ cup grated Parmesan cheese

Garnish:

  • Chopped parsley for garnish

Instructions

  1. Preheat oven: to 375°F (190°C). Grease a 9×13-inch baking dish.
  2. Make cheese sauce: Melt butter, sauté garlic, whisk in flour, milk, and cream. Add salt, pepper, thyme, and half of cheddar.
  3. Layer potatoes: Arrange half in dish, pour half of cheese sauce. Repeat with remaining potatoes and sauce.
  4. Bake: Sprinkle with remaining cheeses, cover, and bake. Uncover and bake until golden brown and bubbly.
  5. Rest and serve: Let it rest for 10 minutes before serving. Garnish with chopped parsley.
