Potatoes:
- 2 pounds Yukon gold or russet potatoes, peeled and thinly sliced
Cheese Sauce:
- 2 tablespoons butter
- 2 tablespoons all-purpose flour
- 2 cups whole milk
- 1 cup heavy cream
- 2 cloves garlic, minced
- 1 teaspoon salt
- ½ teaspoon black pepper
- ½ teaspoon dried thyme
- 1 ½ cups shredded sharp cheddar cheese
- ½ cup grated Parmesan cheese
Garnish:
- Chopped parsley for garnish
Instructions
- Preheat oven: to 375°F (190°C). Grease a 9×13-inch baking dish.
- Make cheese sauce: Melt butter, sauté garlic, whisk in flour, milk, and cream. Add salt, pepper, thyme, and half of cheddar.
- Layer potatoes: Arrange half in dish, pour half of cheese sauce. Repeat with remaining potatoes and sauce.
- Bake: Sprinkle with remaining cheeses, cover, and bake. Uncover and bake until golden brown and bubbly.
- Rest and serve: Let it rest for 10 minutes before serving. Garnish with chopped parsley.

- For a twist, add thinly sliced onions between the potato layers or mix in chopped ham.
