Broth and Seasoning:
- 3 cups seafood or chicken broth
- 1 bay leaf
- 1/2 teaspoon dried thyme
Dairy and Seafood:
- 1 cup heavy cream
- 1/2 cup whole milk
- 1/2 pound shrimp, peeled and deveined
- 1/2 pound scallops or white fish (such as cod or haddock), cut into bite-sized pieces
Additional:
- 1 cup corn kernels (fresh or frozen)
- Salt and pepper to taste
- 2 tablespoons chopped fresh parsley
Instructions
- Sauté Vegetables: In a large pot, heat butter and olive oil. Sauté onion, garlic, celery, and carrots until softened.
- Add Potatoes and Broth: Stir in potatoes, broth, bay leaf, and thyme. Simmer until potatoes are tender.
- Simmer with Cream and Seafood: Lower heat and add cream, milk, shrimp, scallops or fish, and corn. Cook until seafood is opaque.
- Season and Serve: Remove bay leaf, season with salt and pepper. Garnish with parsley and serve warm with bread.
Notes
- For a thicker consistency, mash some cooked potatoes before adding seafood.
