Ingredients
Scale
Shrimp and Vegetables
- 1 lb shrimp, peeled and deveined
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 cup fresh or frozen corn kernels
Sauce
- 2 tablespoons olive oil
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 1/4 teaspoon smoked paprika
- Salt and pepper, to taste
Garnish and Serving
- 2 tablespoons fresh parsley, chopped
- Cooked rice or pasta, for serving
Instructions
- Sauté Onion: Heat olive oil in a large skillet over medium heat. Add chopped onion and sauté until translucent, about 3-4 minutes.
- Add Garlic: Add minced garlic and cook for another 30 seconds until fragrant, stirring frequently to prevent burning.
- Cook Corn: Stir in corn kernels and cook for 3-4 minutes until they become slightly tender and release their sweetness.
- Cook Shrimp: Increase heat to medium-high and add shrimp to the skillet. Cook until shrimp turn pink and opaque, about 2-3 minutes per side. Remove shrimp from skillet and set aside to prevent overcooking.
- Make Cream Sauce: Reduce heat to medium and pour heavy cream into the skillet. Bring it to a gentle simmer, stirring occasionally.
- Add Cheese and Spices: Stir in the grated Parmesan cheese and smoked paprika, continuously stirring until the sauce thickens slightly, approximately 3-5 minutes.
- Combine Shrimp and Sauce: Return cooked shrimp to the skillet and toss them in the creamy sauce to coat evenly. Season with salt and pepper to taste.
- Garnish and Serve: Garnish the dish with fresh chopped parsley. Serve immediately over cooked rice or pasta for a complete meal.
Notes
- For an extra kick, add a pinch of red pepper flakes when cooking the garlic.
- You can substitute heavy cream with half-and-half for a lighter version, though the sauce will be less rich.
- To vary the recipe, try adding diced bell peppers or fresh spinach for additional texture and color.
