- 2 tablespoons olive oil
For the Rice:
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 cup long grain white rice
- 2 cups chicken broth
For the Creamy Sauce:
- 1/2 cup heavy cream
- 1/2 cup sour cream
- 1/2 cup shredded cheddar cheese
- 1 tablespoon chopped parsley (optional)
Instructions
- Season the Chicken: Season the chicken with garlic powder, onion powder, smoked paprika, salt, and pepper.
- Sear the Chicken: Heat olive oil in a skillet, sear the chicken for 4–5 minutes per side until golden brown. Remove and set aside.
- Cook Aromatics: In the same skillet, cook onion until softened, then add garlic.
- Add Rice and Broth: Stir in uncooked rice, pour in chicken broth, and bring to a simmer.
- Simmer: Return chicken to the pan, cover, and cook for 20 minutes until rice is tender.
- Make Creamy Sauce: Remove chicken, stir in heavy cream, sour cream, and cheddar cheese until creamy.
- Finish Dish: Return chicken to the pan, spoon sauce over the top, simmer for 2–3 minutes. Garnish with parsley and serve hot.
