For the Rice:

  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 cup long grain white rice
  • 2 cups chicken broth

For the Creamy Sauce:

  • 1/2 cup heavy cream
  • 1/2 cup sour cream
  • 1/2 cup shredded cheddar cheese
  • 1 tablespoon chopped parsley (optional)

Instructions

  1. Season the Chicken: Season the chicken with garlic powder, onion powder, smoked paprika, salt, and pepper.
  2. Sear the Chicken: Heat olive oil in a skillet, sear the chicken for 4–5 minutes per side until golden brown. Remove and set aside.
  3. Cook Aromatics: In the same skillet, cook onion until softened, then add garlic.
  4. Add Rice and Broth: Stir in uncooked rice, pour in chicken broth, and bring to a simmer.
  5. Simmer: Return chicken to the pan, cover, and cook for 20 minutes until rice is tender.
  6. Make Creamy Sauce: Remove chicken, stir in heavy cream, sour cream, and cheddar cheese until creamy.
  7. Finish Dish: Return chicken to the pan, spoon sauce over the top, simmer for 2–3 minutes. Garnish with parsley and serve hot.
