Instructions

  1. Cook the pasta: Bring a large pot of salted water to a boil and cook the linguine or fettuccine according to the package directions until al dente. Reserve 1/2 cup of the pasta water, then drain the pasta and set it aside.
  2. Prepare the aromatics: In a large skillet over medium heat, melt the butter. Add the minced garlic, finely diced shallot, and red pepper flakes. Sauté the mixture for 1 to 2 minutes until fragrant and the shallot has softened.
  3. Make the sauce: Pour the dry white wine or seafood stock into the skillet and simmer for 2 to 3 minutes, allowing it to reduce slightly. Lower the heat and stir in the heavy cream. Let the sauce simmer gently for another 2 to 3 minutes until it starts to thicken.
  4. Add cheese and lobster: Stir in the grated Parmesan cheese, allowing it to melt fully into the creamy sauce. Add the chopped lobster meat along with the lemon juice and cook just until the lobster is warmed through. Season with salt and black pepper to taste.
  5. Toss pasta with sauce: Add the cooked pasta to the skillet and toss gently to combine and coat everything evenly with the sauce. If the sauce feels too thick, add a splash of the reserved pasta water to loosen it to your desired consistency.
  6. Serve and garnish: Serve the creamy spicy lobster pasta hot, topped with chopped fresh parsley or basil, extra grated Parmesan, and additional red pepper flakes if desired for extra heat.
