Ingredients

Scale

Main Ingredients

  • 4 cups fresh spinach
  • 1½ cups low-fat cottage cheese
  • 4 large eggs
  • ½ cup shredded mozzarella cheese
  • ¼ cup grated Parmesan cheese
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ¼ teaspoon nutmeg
  • 1 tablespoon olive oil
  • ½ cup milk
  • 1 cup whole wheat bread cubes (optional for extra texture)

Instructions

  1. Preheat the Oven: Set your oven to 350°F (175°C) to get it ready for baking your breakfast dish.
  2. Sauté Aromatics and Spinach: In a skillet over medium heat, warm the olive oil, then add the chopped onion and minced garlic. Cook for 3-4 minutes, until translucently tender and fragrant. Add the fresh spinach and cook until wilted. Remove from heat and let cool slightly.
  3. Prepare the Egg Mixture: In a large bowl, whisk together eggs, low-fat cottage cheese, milk, salt, black pepper, and nutmeg until the mixture is smooth and homogeneous.
  4. Combine Ingredients: Stir the sautéed spinach mixture into the egg mixture along with the shredded mozzarella and grated Parmesan cheeses. If desired, fold in the whole wheat bread cubes gently to add texture.
  5. Transfer and Bake: Pour the combined mixture into a greased 8×8-inch baking dish, spreading it evenly. Bake in the preheated oven for 30-35 minutes, or until the top turns golden and the center is set.
  6. Cool and Serve: Remove the bake from the oven and allow it to cool for about 5 minutes before slicing. Serve warm for a hearty breakfast.

Notes

  • For a dairy-free version, substitute the cottage cheese and cheeses with plant-based alternatives and use almond or oat milk.
  • Feel free to add other vegetables like mushrooms or bell peppers for extra flavor and nutrition.
  • This dish reheats well, making it an excellent option for meal prep breakfasts.
  • To make it gluten-free, omit the bread cubes or replace them with gluten-free bread cubes.
