Soup:

  • 1 tablespoon olive oil
  • 1 small yellow onion, diced
  • 2 cloves garlic, minced
  • 4 cups low-sodium vegetable broth
  • 1 (14.5-ounce) can diced tomatoes with juices
  • 1 (9-ounce) package refrigerated cheese tortellini
  • 1 teaspoon dried Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 cups fresh spinach, roughly chopped
  • 3/4 cup heavy cream
  • 1/2 cup grated Parmesan cheese

Garnish:

  • Chopped parsley or basil for garnish

Instructions

  1. In a large pot, heat olive oil over medium heat. Add diced onion and sauté for 4–5 minutes until soft and translucent.
  2. Stir in garlic and cook for 1 minute until fragrant.
  3. Pour in vegetable broth and diced tomatoes with their juices. Bring to a boil.
  4. Add tortellini, Italian seasoning, salt, and pepper. Reduce heat to a simmer and cook for 5–7 minutes, or until tortellini are tender.
  5. Stir in chopped spinach and cook for 2–3 minutes until wilted.
  6. Reduce heat to low, then add heavy cream and Parmesan cheese, stirring until fully combined and creamy.
  7. Taste and adjust seasoning as needed.
  8. Serve hot, garnished with fresh parsley or basil.
