Crust:

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup granulated sugar
  • 6 tablespoons unsalted butter, melted

Filling:

  • 3 (8 oz) packages cream cheese, softened
  • 1 cup granulated sugar
  • 3 large eggs
  • 1/2 cup sour cream
  • 2 teaspoons vanilla extract
  • 1 tablespoon lemon juice

Strawberry Topping:

  • 2 cups fresh strawberries, hulled and sliced
  • 1/3 cup sugar
  • 1 tablespoon lemon juice
  • 1 tablespoon cornstarch mixed with 1 tablespoon cold water

Instructions

  1. Preheat the oven: Preheat the oven to 325°F (163°C). Grease a 9-inch springform pan and wrap the outside with foil to prevent leaks.
  2. Prepare the crust: Mix graham cracker crumbs, sugar, and melted butter. Press into the pan and bake for 10 minutes. Cool slightly.
  3. Make the filling: Beat cream cheese and sugar until smooth. Add eggs, one at a time. Mix in sour cream, vanilla, and lemon juice. Pour over the crust.
  4. Bake: Bake for 55–65 minutes until the center is set but slightly jiggly. Cool in the oven, then chill for at least 4 hours.
  5. Prepare the topping: Cook strawberries, sugar, and lemon juice until soft. Add cornstarch mixture and cook until thickened. Cool and spoon over the cheesecake before serving.
