  • 1 tablespoon olive oil
  • 1 pound boneless skinless chicken breast (cut into bite-sized pieces)
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

For the Orzo:

  • 3 cloves garlic (minced)
  • 1/2 teaspoon Italian seasoning
  • 1 cup uncooked orzo
  • 1 can (14.5 oz) diced tomatoes with juice
  • 2 cups low-sodium chicken broth
  • 1/2 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 2 cups baby spinach
  • fresh basil for garnish (optional)

Instructions

  1. Cook the Chicken: In a large skillet, heat olive oil and cook chicken seasoned with salt and pepper until browned. Set aside.
  2. Prepare the Orzo: In the same skillet, sauté garlic and Italian seasoning. Add orzo, diced tomatoes, and chicken broth. Simmer until orzo is tender.
  3. Finish the Dish: Stir in cream and Parmesan. Add chicken back to the pan with spinach and cook until wilted. Season to taste and garnish with basil.
