- 1/4 teaspoon black pepper
For the Orzo:
- 3 cloves garlic (minced)
- 1/2 teaspoon Italian seasoning
- 1 cup uncooked orzo
- 1 can (14.5 oz) diced tomatoes with juice
- 2 cups low-sodium chicken broth
- 1/2 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 2 cups baby spinach
- fresh basil for garnish (optional)
Instructions
- Cook the Chicken: In a large skillet, heat olive oil and cook chicken seasoned with salt and pepper until browned. Set aside.
- Prepare the Orzo: In the same skillet, sauté garlic and Italian seasoning. Add orzo, diced tomatoes, and chicken broth. Simmer until orzo is tender.
- Finish the Dish: Stir in cream and Parmesan. Add chicken back to the pan with spinach and cook until wilted. Season to taste and garnish with basil.
Notes
- For a lighter version, use half-and-half instead of heavy cream.
- Rotisserie chicken can be used for a quicker meal.
