Main Sauce:
- 1 tablespoon olive oil
- 3 cloves garlic, minced
- 1 small onion, finely diced
- 1 can (28 ounces) crushed tomatoes
- 1 teaspoon dried basil
- 1 teaspoon dried oregano
- 1/2 teaspoon red pepper flakes (optional)
- 1 teaspoon sugar
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 cup heavy cream
- 1/2 cup grated Parmesan cheese
Tortellini and Garnish:
- 1 package (9 ounces) refrigerated cheese tortellini
- 2 cups fresh spinach (optional)
- 2 tablespoons fresh basil, chopped
- Extra Parmesan for serving
Instructions
- Saute Aromatics: Heat olive oil in a large skillet. Cook garlic and onion until softened, about 3 minutes.
- Make Sauce: Add crushed tomatoes, basil, oregano, red pepper flakes, sugar, salt, and pepper. Simmer for 10 minutes. Stir in cream and Parmesan until creamy.
- Cook Tortellini: Cook tortellini according to package instructions. Drain and add to the sauce.
- Finish Dish: Stir in spinach (if using) until wilted. Garnish with fresh basil and extra Parmesan.
Notes
- You can use half-and-half for a lighter version.
- For more protein, add cooked chicken or Italian sausage.
