Main Sauce:

  • 1 tablespoon olive oil
  • 3 cloves garlic, minced
  • 1 small onion, finely diced
  • 1 can (28 ounces) crushed tomatoes
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • 1/2 teaspoon red pepper flakes (optional)
  • 1 teaspoon sugar
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup heavy cream
  • 1/2 cup grated Parmesan cheese

Tortellini and Garnish:

  • 1 package (9 ounces) refrigerated cheese tortellini
  • 2 cups fresh spinach (optional)
  • 2 tablespoons fresh basil, chopped
  • Extra Parmesan for serving

Instructions

  1. Saute Aromatics: Heat olive oil in a large skillet. Cook garlic and onion until softened, about 3 minutes.
  2. Make Sauce: Add crushed tomatoes, basil, oregano, red pepper flakes, sugar, salt, and pepper. Simmer for 10 minutes. Stir in cream and Parmesan until creamy.
  3. Cook Tortellini: Cook tortellini according to package instructions. Drain and add to the sauce.
  4. Finish Dish: Stir in spinach (if using) until wilted. Garnish with fresh basil and extra Parmesan.
