Cheese Tortellini:

Tomato Cream Sauce:
- 1 tablespoon olive oil
- 3 cloves garlic, minced
- 1 (14-ounce) can diced tomatoes
- 1/2 cup tomato sauce
- 1/2 teaspoon dried basil
- 1/2 teaspoon dried oregano
- 1/4 teaspoon crushed red pepper flakes
- 1/2 cup heavy cream
- 1/4 cup grated Parmesan cheese
Additional:
- 2 cups baby spinach
- Salt and black pepper to taste
- Fresh basil and extra Parmesan for garnish
Instructions
- Cook the Tortellini: Prepare the cheese tortellini according to package directions; drain and set aside.
- Make the Tomato Cream Sauce: In a large skillet over medium heat, sauté garlic in olive oil until fragrant. Add diced tomatoes, tomato sauce, dried basil, oregano, and crushed red pepper flakes. Simmer for 5 minutes.
- Finish the Sauce: Reduce heat, stir in heavy cream and Parmesan cheese until smooth. Add baby spinach and cook until wilted.
- Combine and Serve: Toss cooked tortellini in the sauce, season with salt and pepper. Serve garnished with fresh basil and Parmesan.
