- 1 cup cauliflower florets
- 1 cup broccoli florets
- 4 cups vegetable broth
- 1 cup whole milk or half-and-half
- 1/2 cup heavy cream
- 1 teaspoon dried thyme
- 1/2 teaspoon dried basil
- Salt and pepper, to taste
Croutons:
- 2 cups crusty bread cubes
- 1 tablespoon butter
- 1/4 teaspoon garlic powder
- 1/4 teaspoon dried parsley
Instructions
- Soup: Heat olive oil in a large pot. Sauté onion and garlic until softened. Add carrots, celery, potato, zucchini, cauliflower, broccoli. Pour in broth, add thyme, basil, salt, and pepper. Simmer for 20 minutes. Puree part or all of the soup. Stir in milk and cream. Simmer for 5 minutes.
- Croutons: Melt butter in a skillet. Add bread cubes, garlic powder, and parsley. Toast until golden and crisp.
- Serve the soup hot, topped with homemade croutons.
