- 1 tablespoon olive oil

- 4 cups low-sodium chicken broth
Additional Ingredients:
- 1 1/2 cups cooked shredded chicken
- 6 lasagna noodles, broken into pieces
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 1 cup shredded mozzarella cheese
- 1/2 cup ricotta cheese
- Salt and pepper to taste
- Fresh parsley or basil for garnish
Instructions
- Saute Aromatics: In a large pot, heat olive oil. Add diced onion and cook until soft. Stir in garlic, thyme, oregano, and red pepper flakes.
- Add Broth and Noodles: Pour in chicken broth and bring to a boil. Add lasagna noodles and cook until tender.
- Finish Soup: Reduce heat, stir in chicken, cream, Parmesan, mozzarella, and ricotta. Season with salt and pepper. Simmer until heated through.

- You can use rotisserie chicken for convenience.
