Instructions

  2. Mix Dry Ingredients: In a medium bowl, whisk together the flour, baking soda, and salt.
  3. Cream Butter and Sugars: In a large mixing bowl, cream the softened butter with granulated sugar and brown sugar until light and fluffy.
  4. Add Wet Ingredients: Beat in the egg, vanilla extract, and heavy cream until smooth.
  5. Combine and Form Dough: Gradually add the dry ingredients to the wet mixture and mix until a soft dough forms. Scoop tablespoon-sized portions and roll into balls.
  6. Bake: Place the balls on the baking sheet, slightly flatten, and bake for 10–12 minutes until golden.
  7. Brûlée Topping: Cool the cookies, sprinkle with granulated sugar, and caramelize with a kitchen torch until golden and crisp.
  8. Serve: Allow the topping to set for 1–2 minutes before serving.
