Description

These Cretan Honey Pancakes Stuffed are a delightful Greek dessert featuring thin pancakes filled with a creamy mizithra or ricotta cheese mixture, flavored with fresh mint and cinnamon, then generously drizzled with aromatic Cretan honey and topped with crunchy walnuts. Perfect served warm, they make an irresistible brunch or dessert option reflecting traditional flavors from Crete.

Ingredients

Scale

Pancake Batter

  • 1 cup all-purpose flour
  • 1 cup water
  • 1/4 teaspoon salt
  • 1 tablespoon olive oil (plus more for cooking)

Filling

  • 1/2 cup crumbled fresh mizithra or ricotta cheese
  • 1 tablespoon chopped fresh mint
  • 1/2 teaspoon cinnamon (optional)

Topping

  • 1/3 cup Cretan honey (or high-quality floral honey)
  • 1/4 cup chopped walnuts (optional)
  • Extra honey for drizzling

Instructions

  1. Prepare the batter: In a bowl, whisk together the all-purpose flour, water, salt, and olive oil until the batter is smooth and free of lumps. Let the batter rest for 15 minutes to hydrate the flour and improve texture.
  2. Cook the pancakes: Heat a small nonstick skillet over medium heat and lightly brush it with olive oil. Pour a small amount of batter into the pan and swirl it around to spread thinly, similar to making a crêpe. Cook each side for 1 to 2 minutes until the pancake turns lightly golden. Repeat with remaining batter, stacking the cooked pancakes on a plate.
  3. Make the filling: In a separate bowl, combine the crumbled mizithra or ricotta cheese with chopped fresh mint and cinnamon if using. Mix gently until evenly combined.
  4. Assemble the pancakes: Spoon a heaping tablespoon of the cheese filling onto each pancake. Fold each pancake in half or roll it up to enclose the filling and arrange on a serving plate.
  5. Serve with honey and walnuts: Warm the Cretan honey slightly to make it easier to drizzle. Generously drizzle the honey over the stuffed pancakes and sprinkle with chopped walnuts if desired. Serve immediately while warm.

Notes

  • Mizithra cheese is traditional in Crete, but ricotta or goat cheese can be used as a suitable substitute.
  • These pancakes are best enjoyed warm for optimal texture and flavor.
  • This dish works well as a brunch item or a sweet dessert.
  • Adjust the amount of honey and walnuts according to taste preferences.
