Description

Ingredients

Wet Ingredients:

  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon almond extract

Mix-Ins:

  • 1 cup whole almonds, toasted and coarsely chopped

Instructions

  1. Preheat the Oven: Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Prepare the Dry Ingredients: In a medium bowl, whisk together flour, sugar, baking powder, and salt.
  3. Mix the Wet Ingredients: In another bowl, beat the eggs, vanilla extract, and almond extract until smooth.
  4. Combine and Shape: Gradually stir the wet ingredients into the dry ingredients until a dough forms, then fold in the almonds. Divide the dough in half and shape each portion into a log about 12 inches long and 2 inches wide.
  5. Bake: Place both logs onto the prepared baking sheet and bake for 25 to 30 minutes, or until lightly golden and firm to the touch. Let cool for 10 minutes.
  6. Slice and Bake Again: Using a serrated knife, slice each log diagonally into 1/2-inch slices. Place slices cut side down on the baking sheet and bake for another 10 to 12 minutes per side, until crisp and golden.
  7. Cool and Serve: Transfer the biscotti to a wire rack to cool completely before serving.
