Instructions
- Preheat the Oven: Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Prepare the Dry Ingredients: In a medium bowl, whisk together flour, sugar, baking powder, and salt.
- Mix the Wet Ingredients: In another bowl, beat the eggs, vanilla extract, and almond extract until smooth.
- Combine and Shape: Gradually stir the wet ingredients into the dry ingredients until a dough forms, then fold in the almonds. Divide the dough in half and shape each portion into a log about 12 inches long and 2 inches wide.
- Bake: Place both logs onto the prepared baking sheet and bake for 25 to 30 minutes, or until lightly golden and firm to the touch. Let cool for 10 minutes.
- Slice and Bake Again: Using a serrated knife, slice each log diagonally into 1/2-inch slices. Place slices cut side down on the baking sheet and bake for another 10 to 12 minutes per side, until crisp and golden.
- Cool and Serve: Transfer the biscotti to a wire rack to cool completely before serving.
Notes
- For extra flavor, drizzle or dip the cooled biscotti in melted dark or white chocolate.
