Instructions

  1. Preheat Oven and Melt Butter: Preheat your oven to 425°F (220°C). Place the 2 tablespoons of unsalted butter in a 10-inch oven-safe skillet and put the skillet in the oven while it heats to allow the butter to melt and the skillet to get hot.
  2. Prepare the Batter: In a mixing bowl, whisk 3 large eggs until frothy. Add 2/3 cup all-purpose flour, 2/3 cup whole milk, 1 tablespoon granulated sugar, 1/2 teaspoon vanilla extract, and 1/4 teaspoon salt. Whisk everything together until you have a smooth batter.
  3. Pour Batter into Hot Skillet: Carefully remove the hot skillet with melted butter from the oven. Swirl it to coat the bottom and sides evenly with the butter. Immediately pour the prepared batter into the hot skillet to ensure a good rise.
  4. Bake the Pancake: Return the skillet to the oven and bake for 18–20 minutes or until the pancake is puffed up, golden brown around the edges, and set in the center.
  5. Serve: Remove the skillet from the oven and allow the pancake to cool slightly. Dust the top with powdered sugar and add fresh berries or sliced fruit. If desired, drizzle with maple syrup. Serve immediately for the best texture and flavor.
