Ground Beef Filling:

  • 1 pound ground beef

  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ½ cup tomato sauce or salsa

  • 8 small corn tortillas
  • 1 cup shredded cheddar or Mexican blend cheese
  • Vegetable oil, for frying

Instructions

  1. Sauté Aromatics: In a skillet over medium heat, warm the olive oil and sauté the onion until softened, about 3 minutes. Add the garlic and cook another 30 seconds.
  2. Cook Ground Beef: Add the ground beef to the skillet and cook until browned, breaking it up as it cooks, about 6–8 minutes. Drain excess grease.
  3. Season and Simmer: Stir in chili powder, cumin, paprika, salt, and pepper. Add tomato sauce or salsa and let simmer for 2–3 minutes, until thickened. Remove from heat.
  4. Assemble Tacos: Place beef mixture and cheese onto one half of a tortilla. Fold over to close.
  5. Fry Tacos: Heat vegetable oil in a skillet. Fry tacos for 2–3 minutes per side until golden and crispy.
  6. Serve: Drain tacos on paper towels and serve hot with desired toppings.
