Ground Beef Filling:
- 1 pound ground beef
- 1 tablespoon olive oil
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 tablespoon chili powder
- 1 teaspoon cumin
- ½ teaspoon smoked paprika
- ½ teaspoon salt
- ¼ teaspoon black pepper
- ½ cup tomato sauce or salsa
Additional Ingredients:
- 8 small corn tortillas
- 1 cup shredded cheddar or Mexican blend cheese
- Vegetable oil, for frying
Optional Toppings:
- Shredded lettuce
- Diced tomatoes
- Sour cream
- Chopped onions
- Jalapeños

- Hot sauce
Instructions
- Sauté Aromatics: In a skillet over medium heat, warm the olive oil and sauté the onion until softened, about 3 minutes. Add the garlic and cook another 30 seconds.
- Cook Ground Beef: Add the ground beef to the skillet and cook until browned, breaking it up as it cooks, about 6–8 minutes. Drain excess grease.
- Season and Simmer: Stir in chili powder, cumin, paprika, salt, and pepper. Add tomato sauce or salsa and let simmer for 2–3 minutes, until thickened. Remove from heat.
- Assemble Tacos: Place beef mixture and cheese onto one half of a tortilla. Fold over to close.
- Fry Tacos: Heat vegetable oil in a skillet. Fry tacos for 2–3 minutes per side until golden and crispy.
- Serve: Drain tacos on paper towels and serve hot with desired toppings.
Notes
- Warm tortillas slightly before folding to prevent cracking.
- For a lighter version, brush the tacos with oil and bake at 400°F (200°C) for 10–12 minutes, flipping halfway.
