Ingredients
Scale
Chicken and Topping
- 4 boneless, skinless chicken thighs or breasts
- 1/2 cup crumbled feta cheese
- 1/4 cup plain Greek yogurt
- 2 tablespoons hot honey (plus more for drizzling)
- 2 cloves garlic, minced
- 1/2 teaspoon dried oregano
- 1/2 teaspoon smoked paprika
- Salt and pepper to taste
Crust
- 1 cup panko breadcrumbs
- 1/2 cup grated Parmesan cheese
- 2 tablespoons olive oil (for drizzling or spraying)
Garnish
- Chopped fresh parsley (optional)
Instructions
- Preheat and Prepare Baking Sheet: Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper to prevent sticking and make cleanup easier.
- Make Feta Mixture: In a small bowl, combine the crumbled feta cheese, Greek yogurt, hot honey, minced garlic, dried oregano, smoked paprika, salt, and pepper. Mix well to form a thick paste that will coat the chicken.
- Coat Chicken: Pat the chicken pieces dry with paper towels to ensure the coating sticks well. Spread the feta mixture evenly over the tops of each chicken piece.
- Prepare Crust: In a separate bowl, mix together the panko breadcrumbs and grated Parmesan cheese. Press this breadcrumb mixture firmly over the feta-coated side of each chicken piece to create the crispy topping.
- Add Olive Oil and Bake: Lightly drizzle or spray the tops of the coated chicken with olive oil to help the crust brown and crisp up. Place the chicken on the prepared baking sheet and bake for 25–30 minutes, or until the chicken is cooked through and the crust is golden and crispy.
- Rest and Serve: Remove the chicken from the oven and let it rest for 5 minutes to retain juices. Drizzle with additional hot honey for extra heat and sweetness, and garnish with chopped fresh parsley if desired before serving.
Notes
- For extra crunch, toast the panko breadcrumbs in a dry skillet before combining with Parmesan cheese.
- Adjust the amount of hot honey to your preferred heat level for a milder or spicier dish.
- To make this dish gluten-free, substitute panko breadcrumbs with gluten-free breadcrumbs.
