These Crispy Jalapeño Popper Beef Taquitos are a delightful fusion of spicy, creamy jalapeño poppers and savory ground beef, all rolled up in a crispy tortilla. Perfect for a party appetizer or a fun weeknight meal!

For the Beef Filling:

  • 1 lb ground beef
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon smoked paprika

For the Cream Cheese Mixture:

  • 4 oz cream cheese, softened
  • 1/2 cup shredded cheddar cheese
  • 1/2 cup shredded Monterey Jack cheese
  • 2 jalapeños, finely diced (seeds removed for less heat)

Additional Ingredients:

  • 1012 small flour tortillas
  • olive oil spray or 2 tablespoons olive oil for brushing

Instructions

  1. Preheat the Oven: Preheat the oven to 425°F (220°C).
  2. Cook the Beef: In a skillet over medium heat, cook the ground beef with salt, pepper, garlic powder, onion powder, and smoked paprika until browned. Drain excess fat and stir in the cream cheese until melted.
  3. Add Cheese and Jalapeños: Remove from heat and mix in the shredded cheddar and Monterey Jack cheeses, along with the diced jalapeños.
  4. Assemble Taquitos: Spoon the beef mixture onto each tortilla, roll tightly into a taquito, and place seam side down on a baking sheet.
  5. Bake: Lightly spray or brush the taquitos with olive oil. Bake for 15–18 minutes until golden and crispy.
  6. Serve: Let cool for 5 minutes before serving.

Notes

  • For extra heat, leave the seeds in the jalapeños or add hot sauce.
  • These can also be air-fried at 400°F for 8–10 minutes.
