Ingredients
Baby Potatoes:
- 2 pounds baby potatoes, halved
Seasoning:
- 3 tablespoons olive oil
- 1/2 cup grated Parmesan cheese
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon smoked paprika
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons chopped fresh parsley (optional)
- Additional Parmesan for serving (optional)
Instructions

Preheat the oven to 425°F (220°C) and line a large baking sheet with parchment paper.
In a large bowl, toss the halved baby potatoes with olive oil, Parmesan cheese, garlic powder, onion powder, smoked paprika, salt, and pepper until evenly coated.
Arrange the potatoes cut-side down on the baking sheet. Roast for 25–30 minutes until golden brown and crispy. Let cool slightly and transfer to a serving platter. Garnish with parsley and extra Parmesan if desired.

- For extra crispiness, don’t overcrowd the pan.
