- 2 cups mashed potatoes (cooled)
Cheese Mixture:

- 1/4 teaspoon black pepper
- 1 egg, beaten
- 3/4 cup breadcrumbs (plus extra for coating)

Instructions
- Mix Ingredients: In a large bowl, combine mashed potatoes, cheddar cheese, Parmesan cheese, green onions, garlic powder, salt, pepper, egg, and breadcrumbs. Blend well until mixture holds its shape.
- Shape and Coat: Scoop tablespoons of mixture, roll into balls. Coat each ball in breadcrumbs.
- For Frying: Fry bites in hot oil for 2–3 minutes, turning until golden. Drain on paper towels.
- For Baking: Preheat oven to 400°F. Bake bites on a parchment-lined sheet for 18–20 minutes until crisp, flipping halfway.
- Serve hot with dipping sauce.
