Description

These Crispy Vegetable Fritters with Creamy Garlic Tzatziki are a delicious and healthy Mediterranean-inspired appetizer featuring golden, crunchy zucchini and carrot fritters paired with a refreshing homemade garlic tzatziki sauce. Perfectly seasoned and pan-fried to perfection, these fritters offer a delightful combination of textures and flavors, making them ideal for a light meal or entertaining guests.

Ingredients

Scale

For the fritters:

  • 1 medium zucchini, grated and drained
  • 1 medium carrot, grated
  • 1/2 cup corn kernels (fresh or frozen)
  • 1/4 cup chopped green onions
  • 2 tablespoons chopped fresh parsley or dill
  • 2 large eggs
  • 1/2 cup all-purpose flour
  • 1/4 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Olive oil for frying

For the tzatziki:

  • 1 cup plain Greek yogurt
  • 1/2 cucumber, grated and drained
  • 1 clove garlic, finely minced
  • 1 tablespoon lemon juice
  • 1 tablespoon olive oil
  • 1 tablespoon chopped fresh dill
  • Salt and pepper to taste

Instructions

  1. Prepare the Tzatziki: In a small bowl, combine the Greek yogurt, grated and drained cucumber, finely minced garlic, lemon juice, olive oil, chopped fresh dill, salt, and pepper. Mix well until smooth and refrigerate while you prepare the fritters to allow flavors to meld.
  2. Prepare the Fritter Mixture: Place the grated zucchini in a clean kitchen towel and squeeze out as much moisture as possible to prevent sogginess. In a large mixing bowl, combine the dried zucchini, grated carrot, corn kernels, chopped green onions, parsley or dill, eggs, all-purpose flour, baking powder, salt, and black pepper. Mix thoroughly until all ingredients are well combined.
  3. Cook the Fritters: Heat a thin layer of olive oil in a skillet over medium heat. Scoop about 2 tablespoons of the vegetable mixture for each fritter, place in the pan, and flatten slightly with the back of a spoon. Cook each fritter for 3 to 4 minutes on each side or until they become golden brown and crispy. Avoid overcrowding the pan for even cooking.
  4. Drain and Serve: Transfer cooked fritters onto paper towels to drain any excess oil. Serve them warm with a generous dollop of the prepared garlic tzatziki sauce alongside for dipping or spreading.

Notes

  • To make these gluten-free, substitute the all-purpose flour with a 1:1 gluten-free flour blend.
  • These fritters are versatile and work well with additional vegetables like sweet potato, spinach, or chopped bell peppers.
  • For a vegan variation, replace eggs with a flaxseed or chia egg substitute and use dairy-free yogurt for the tzatziki.
  • Ensure squeezing the zucchini thoroughly to avoid watery fritters and help them crisp up better.
