  • 2 pounds ground beef
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 1 green bell pepper, diced
  • 2 (15-ounce) cans kidney beans, drained and rinsed
  • 2 (14.5-ounce) cans diced tomatoes
  • 1 (8-ounce) can tomato sauce
  • 3 tablespoons chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 1 teaspoon dried oregano
  • 1/2 teaspoon cayenne pepper (optional)
  • Salt and black pepper to taste

Instructions

  1. Cook the Ground Beef: In a large skillet over medium heat, cook the ground beef until browned, breaking it apart as it cooks. Drain any excess fat.
  2. Sauté Vegetables: Add chopped onion, garlic, and diced green bell pepper to the skillet and sauté for about 5 minutes until softened.
  3. Combine Ingredients: Transfer the beef mixture to your crock pot. Add kidney beans, diced tomatoes, tomato sauce, chili powder, cumin, paprika, oregano, cayenne pepper, salt, and black pepper. Stir well to combine.
  4. Cook: Cover and cook on low for 6-8 hours or on high for 3-4 hours.
  5. Serve: Stir before serving and adjust seasoning if needed. Serve hot with your favorite toppings like shredded cheese, sour cream, or chopped green onions.
