Description

These Crock Pot French Dip Sandwiches are a hearty and satisfying meal perfect for busy weeknights or casual gatherings. Tender, flavorful chuck roast is slow-cooked to perfection and layered with melted cheese on a toasted roll, served with a savory au jus for dipping.

Chuck Roast:

  • 3–4 pounds chuck roast
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder

Au Jus:

  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon soy sauce
  • 1 (10.5-ounce) can beef consommé or beef broth
  • 1 cup low-sodium beef broth

Additional Ingredients:

  • 1 large onion (thinly sliced)
  • 1 tablespoon fresh thyme or 1 teaspoon dried thyme
  • 6 hoagie rolls or French rolls
  • 12 slices provolone or Swiss cheese
  • Optional: butter for toasting rolls

Instructions

  1. Season the Chuck Roast: Season chuck roast with salt, pepper, garlic powder, and onion powder.
  2. Sear the Roast: Heat olive oil in a skillet and sear the roast until browned.
  3. Transfer to Slow Cooker: Place roast in the crock pot and add Worcestershire sauce, soy sauce, beef consommé, beef broth, onion, and thyme.
  4. Cook: Cook on low for 8–9 hours or high for 4–5 hours until tender.
  5. Shred and Assemble: Shred the meat, assemble sandwiches with cheese, broil, and serve with au jus.
