Chuck Roast:
- 3–4 pounds chuck roast
- 1 tablespoon olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
Au Jus:
- 1 tablespoon Worcestershire sauce
- 1 tablespoon soy sauce
- 1 (10.5-ounce) can beef consommé or beef broth
- 1 cup low-sodium beef broth
Additional Ingredients:
- 1 large onion (thinly sliced)
- 1 tablespoon fresh thyme or 1 teaspoon dried thyme
- 6 hoagie rolls or French rolls
- 12 slices provolone or Swiss cheese
- Optional: butter for toasting rolls
Instructions
- Season the Chuck Roast: Season chuck roast with salt, pepper, garlic powder, and onion powder.
- Sear the Roast: Heat olive oil in a skillet and sear the roast until browned.
- Transfer to Slow Cooker: Place roast in the crock pot and add Worcestershire sauce, soy sauce, beef consommé, beef broth, onion, and thyme.
- Cook: Cook on low for 8–9 hours or high for 4–5 hours until tender.
- Shred and Assemble: Shred the meat, assemble sandwiches with cheese, broil, and serve with au jus.
