Beef Stew:

  • 2 pounds beef stew meat, cut into 1-inch cubes
  • 4 cups beef broth
  • 3 large carrots, sliced
  • 3 medium potatoes, peeled and diced
  • 2 celery stalks, sliced
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 2 tablespoons tomato paste
  • 1 teaspoon Worcestershire sauce
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and black pepper to taste

Thickening:

  • 2 tablespoons cornstarch mixed with 2 tablespoons water
  • Chopped fresh parsley for garnish (optional)

Instructions

  1. Season the beef: Season the beef cubes with salt and black pepper.
  2. Prepare the stew: Add the beef, carrots, potatoes, celery, onion, and garlic to the crockpot. Stir in the beef broth, tomato paste, Worcestershire sauce, dried thyme, and rosemary until combined.
  3. Cook: Cover and cook on low for 8 hours or on high for 4-5 hours until the beef is tender and vegetables are cooked through.
  4. Thicken: About 30 minutes before serving, stir in the cornstarch slurry to thicken the stew. Cover and cook until the stew has thickened.
  5. Adjust seasoning and serve: Taste and adjust seasoning if needed. Garnish with fresh parsley before serving.
