Beef Stew:
- 2 pounds beef stew meat, cut into 1-inch cubes
- 4 cups beef broth

- 3 medium potatoes, peeled and diced
- 2 celery stalks, sliced

- 3 cloves garlic, minced
- 2 tablespoons tomato paste
- 1 teaspoon Worcestershire sauce
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- Salt and black pepper to taste
Thickening:
- 2 tablespoons cornstarch mixed with 2 tablespoons water
- Chopped fresh parsley for garnish (optional)
Instructions
- Season the beef: Season the beef cubes with salt and black pepper.
- Prepare the stew: Add the beef, carrots, potatoes, celery, onion, and garlic to the crockpot. Stir in the beef broth, tomato paste, Worcestershire sauce, dried thyme, and rosemary until combined.
- Cook: Cover and cook on low for 8 hours or on high for 4-5 hours until the beef is tender and vegetables are cooked through.
- Thicken: About 30 minutes before serving, stir in the cornstarch slurry to thicken the stew. Cover and cook until the stew has thickened.
- Adjust seasoning and serve: Taste and adjust seasoning if needed. Garnish with fresh parsley before serving.
