Ingredients
Scale
Chicken
- 1 1/2 to 2 pounds boneless, skinless chicken breasts or thighs
Stuffing Mix
- 1 box (6 oz) stuffing mix (like Stove Top)
Sauce
- 1 can (10.5 oz) cream of chicken soup
- 1/2 cup sour cream
- 1/2 cup low-sodium chicken broth
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- Salt and black pepper to taste
Optional
- 1 1/2 cups frozen mixed vegetables (optional)
- Fresh parsley for garnish (optional)
Instructions
- Prepare Slow Cooker: Spray the inside of a slow cooker with nonstick cooking spray to prevent sticking and make cleanup easier.
- Season Chicken: Place the chicken breasts or thighs in the bottom of the crockpot. Season evenly with garlic powder, onion powder, salt, and black pepper to infuse flavor.
- Mix Sauce: In a medium bowl, combine the cream of chicken soup, sour cream, and chicken broth. Stir until the mixture is smooth and well blended.
- Add Sauce Over Chicken: Spoon the creamy mixture over the seasoned chicken in the crockpot, covering it thoroughly to keep the chicken moist during cooking.
- Add Stuffing and Vegetables: Sprinkle the stuffing mix evenly over the soup layer. If using frozen mixed vegetables, scatter them on top of the stuffing to incorporate extra nutrition and color.
- Cook: Cover with the crockpot lid and cook on low heat for 6 to 7 hours or on high for 3 to 4 hours, until the chicken is fully cooked and tender.
- Fluff and Serve: Before serving, gently fluff the stuffing with a fork to separate the grains. Garnish with freshly chopped parsley if desired for a touch of freshness and color.
Notes
- You can shred the chicken before serving or leave it whole based on your preference.
- If the stuffing seems too dry after cooking, add a splash of chicken broth and mix gently.
