Description

This hearty and comforting Crockpot Chicken Stuffing recipe combines tender slow-cooked chicken with creamy soup and flavorful stuffing mix. Easy to prepare and perfect for a cozy family dinner, it also includes optional mixed vegetables to add a nutritious touch.

Ingredients

Scale

Chicken

  • 1 1/2 to 2 pounds boneless, skinless chicken breasts or thighs

Stuffing Mix

  • 1 box (6 oz) stuffing mix (like Stove Top)

Sauce

  • 1 can (10.5 oz) cream of chicken soup
  • 1/2 cup sour cream
  • 1/2 cup low-sodium chicken broth
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and black pepper to taste

Optional

  • 1 1/2 cups frozen mixed vegetables (optional)
  • Fresh parsley for garnish (optional)

Instructions

  1. Prepare Slow Cooker: Spray the inside of a slow cooker with nonstick cooking spray to prevent sticking and make cleanup easier.
  2. Season Chicken: Place the chicken breasts or thighs in the bottom of the crockpot. Season evenly with garlic powder, onion powder, salt, and black pepper to infuse flavor.
  3. Mix Sauce: In a medium bowl, combine the cream of chicken soup, sour cream, and chicken broth. Stir until the mixture is smooth and well blended.
  4. Add Sauce Over Chicken: Spoon the creamy mixture over the seasoned chicken in the crockpot, covering it thoroughly to keep the chicken moist during cooking.
  5. Add Stuffing and Vegetables: Sprinkle the stuffing mix evenly over the soup layer. If using frozen mixed vegetables, scatter them on top of the stuffing to incorporate extra nutrition and color.
  6. Cook: Cover with the crockpot lid and cook on low heat for 6 to 7 hours or on high for 3 to 4 hours, until the chicken is fully cooked and tender.
  7. Fluff and Serve: Before serving, gently fluff the stuffing with a fork to separate the grains. Garnish with freshly chopped parsley if desired for a touch of freshness and color.

Notes

  • You can shred the chicken before serving or leave it whole based on your preference.
  • If the stuffing seems too dry after cooking, add a splash of chicken broth and mix gently.
