For the Meatloaf:
- 2 pounds ground beef
- 1 cup breadcrumbs
- 2 large eggs, lightly beaten
- 1/2 cup milk
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1/4 cup ketchup
- 2 tablespoons Worcestershire sauce
- 1 teaspoon dried thyme
- 1 teaspoon salt
- 1/2 teaspoon freshly ground black pepper
For the Topping:
- 1/2 cup ketchup
- 2 tablespoons brown sugar
- 1 tablespoon Dijon mustard
For Garnish:
- Chopped fresh parsley
Instructions
- In a large bowl, combine the ground beef, breadcrumbs, eggs, milk, chopped onion, minced garlic, 1/4 cup ketchup, Worcestershire sauce, dried thyme, salt, and pepper. Mix gently until just combined.
- Shape the meat mixture into a loaf and place it on a large piece of parchment paper or aluminum foil. Transfer the loaf with the parchment or foil to the crockpot.
- In a small bowl, mix together the remaining 1/2 cup ketchup, brown sugar, and Dijon mustard. Spread the sauce evenly over the top of the meatloaf.
- Cover and cook on low for 6-7 hours or on high for 3-4 hours, until the meatloaf is cooked through and reaches an internal temperature of 160°F (71°C).
- Carefully lift the meatloaf out using the parchment or foil, let it rest for 5 minutes, then slice and serve garnished with fresh parsley.
