For the Meatloaf:

  • 2 pounds ground beef
  • 1 cup breadcrumbs
  • 2 large eggs, lightly beaten
  • 1/2 cup milk
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1/4 cup ketchup
  • 2 tablespoons Worcestershire sauce
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon freshly ground black pepper

For the Topping:

  • 1/2 cup ketchup
  • 2 tablespoons brown sugar
  • 1 tablespoon Dijon mustard

For Garnish:

  • Chopped fresh parsley

Instructions

  1. In a large bowl, combine the ground beef, breadcrumbs, eggs, milk, chopped onion, minced garlic, 1/4 cup ketchup, Worcestershire sauce, dried thyme, salt, and pepper. Mix gently until just combined.
  2. Shape the meat mixture into a loaf and place it on a large piece of parchment paper or aluminum foil. Transfer the loaf with the parchment or foil to the crockpot.
  3. In a small bowl, mix together the remaining 1/2 cup ketchup, brown sugar, and Dijon mustard. Spread the sauce evenly over the top of the meatloaf.
  4. Cover and cook on low for 6-7 hours or on high for 3-4 hours, until the meatloaf is cooked through and reaches an internal temperature of 160°F (71°C).
  5. Carefully lift the meatloaf out using the parchment or foil, let it rest for 5 minutes, then slice and serve garnished with fresh parsley.
